How to make Zucchini Pizzaiola Gratin
Hola y’all! While visiting family in Texas, I decided that I wanted to try a new side dish. I also wanted to make sure to include my brother in the cooking video because any time that we are together, the good times just keep on coming! He also likes to cook and was more than gracious to join me for this special episode in his kitchen. (Be sure to check out the video for some hilarious laughs!) Let me show you how to make Zucchini Pizzaiola Gratin and hopefully give you another dish that might trick your kiddos into eating their green veggies!
By the way… I made up the name for this dish. I was trying to get my kids to try it and it has parmesan cheese and marinara sauce. So, I knew that throwing the term “pizza” in there would be a good idea. The main character is zucchini, so I felt like it needed to land in the title as well. Lastly, I knew that I wanted to crisp up the topping very quickly in the oven under the broiler and that means that it could be considered a gratin. All I did was add all of those interesting ideas together and BAM! I came up with a name. No, it’s probably not traditional. No, it’s probably not Italian. But I don’t care. With these tricks I was able to get my kids to taste it and LIKE IT! Plus, it’s really fun to say and sounds kinda fancy.
Zucchini Pizzaiola Gratin Recipe
Equipment Needed:
- Grill pan or Outside grill
- Shallow baking dish
Pantry Items:
- 1/4 cup olive oil (A little more for drizzling on top)
- 3/4 cup of Marinara sauce
- 1/3 cup Parmesan cheese
- 1/3 cup Italian style breadcrumbs
Seasonings/Spices:
- 1/2 Tablespoon onion powder
- 1/2 Tablespoon garlic powder
- 1 Teaspoon salt
- Freshly Ground Black Pepper (to taste)
Produce Needed:
- 6 Zucchinis (cut into cubes)
Zucchini Pizzaiola Gratin Instructions:
- First, cut 6 zucchinis into bite size pieces and place into a large mixing bowl.
- Pour 1/4 cup olive over the zucchini pieces.
- Next, add onion powder, garlic powder, salt, and pepper to the zucchinis.
- Mix generously with your hands to make sure that all zucchinis are coated with the oil and seasonings.
- Heat your grill pan on medium high heat and when it’s hot, add the zucchinis in a single layer. (You will probably have to do this in 3 batches)
- Make sure that you move the zucchinis around so that they don’t burn.
- Grill the zucchinis until they have grill marks and great flavor and color and add to shallow baking dish.
- Pour the marinara sauce over the grilled zucchinis in the baking dish and mix well.
- Finally, mix the breadcrumbs and parmesan cheese in a small bowl and sprinkle on top of the grilled zucchinis in the shallow baking dish.
- Drizzle a little bit of olive oil over the top.
- Place in the oven under the broiler, but make sure to keep an eye on them so that they don’t burn.
- The Broiler will crisp up the parmesan and breadcrumbs and heat up the marinara sauce.
- Pull out of the oven and serve immediately.
- Serve with any of your favorite main dishes!
