Kayla’s Pecan Nut Roll

Each year around Christmas time, our friend group tries to get together for our annual ornament exchange and go out to eat. One year, we decided to get together and make candy. Kayla decided to make this Pecan Nut roll, which has always been a family favorite of hers.

Kayla’s grandmother, Shirley Fulton, would always make this special treat for Christmas time. They would celebrate Christmas in Mississippi where she was born and raised, and all of the family would make the drive from Louisiana to be together for the holidays.

When I tasted it, I knew that it would quickly become a favorite of my families too! And it is extra special this year, since her grandmother passed September of this year. In some small way, I would like to honor her memory here on my page and my special friendship with her sweet granddaughter, Kayla.

kayla’s pecan nut roll ingredients:

Equipment needed:

  • Pot (for melting the marshmallows and butter)
  • Large mixing bowl
  • Spatula

Pantry items:

  • 10 oz bag of mini marshmallows
  • 1 can of sweet and condensed milk
  • 2 cups of honey roasted chopped pecans
  • 2 cups of plain walnuts

Fridge items:

  • 1 stick of butter

kayla’s pecan nut roll instructions:

  • First, place the marshmallows and butter into a pot and warm until melted completely.
  • Second, take the entire box of graham crackers and crush them. I simply leave them in the package and crush by hitting them with the back of a spoon. But you could also put all of the graham crackers into a large Ziploc bag and crush them that way.
  • Third, add the sweet and condensed milk to the melted marshmallow and butter and mix well.

  • Next, stir in the chopped pecans and walnuts.
  • Then, add the crushed graham crackers and mix completely.
  • Pour the mixture onto a platter and form it into a log.

  • Finally, cover the pecan nut roll with plastic wrap and place into the fridge for at least 2 hours to chill.
  • After it has been chilled, uncover the pecan nut roll and slice.
  • Arrange the slices onto a beautiful platter and enjoy! (I think coffee makes the best accompaniment)

This sweet treat is chewy, nutty, and nostalgic. It is so easy to make and is even easier to eat. No fork or plate required. You can grab a piece and eat on the go.
