You don't have to give up everything that resembles chips or crackers, you just have to find substitutions that give you the flavors and textures that you are missing so that you don't feel like you are missing out.

Equipment

  • 1` Baking tray (if you want this to go faster, I would use more than one so that you can cook more than one batch at a time.)
  • Parchment paper

Ingredients
  

  • 8 oz. block of sharp cheddar cheese
  • 8 oz. block of pepper jack cheese

Instructions
 

  • First, preheat the oven to 300 degrees.
  • Second, put a piece of parchment paper on the baking sheet.
  • Third, cut the blocks of cheese in half.
  • Next, slice the 2 blocks of cheese into little squares with a sharp knife.
  • Then, place the square slices of cheese onto the parchment paper. (Make sure that the squares of cheese aren't too close together because they will melt together. I did 4x4 on the tray and it was perfect.)
  • Place the baking sheet with the cheese squares into the 300-degree oven for 20 minutes.
  • ​Remove the cheese crackers from the oven after 20 minutes and they are crispy and golden brown.
  • Slide the sheet of parchment paper with the cooked cheese crackers on it off of the baking sheet and onto your table or countertop to cool.
  • Then, place another piece of parchment paper onto the baking sheet and do another layer of cheese squares to bake. (You will alternate the pieces of parchment paper in between each batch.)
  • Bake the second batch of cheesy crackers for 20 minutes.
  • By the time the next batch of crackers is done, the previous crackers should be cooled enough to handle and placed into a bowl or directly into a Ziplock bag. (You can see this better in the video)
  • Repeat this process until all of the crackers have been baked and cooled.
  • Finally, place the crunchy crackers into a Ziplock bag or an airtight container to enjoy for the week!
