First, cut the leafy tops off the fresh strawberries to make a flat bottom and place the flat side down.
Second, cut the tip of the strawberries off right above the middle mark and set aside. (About 1/4 from the tip of the strawberry)
Third, place the cut pieces of strawberry on paper towels to absorb all the moisture.
Next, let them sit on the paper towels for 15-20 minutes.
Turn them over and let the second side of the strawberries sit on paper towels to absorb moisture.
Then, combine the vanilla frosting, whipped cream cheese, vanilla extract, and marshmallow fluff in a mixing bowl to make the icing.
Fill a Ziploc or a pastry bag with the icing to make filling the strawberries easier, and use a star tip to make the right design on top.
Next, pipe some icing onto the bottom half of the strawberry.
Then, place the tip of the strawberry on top of the icing.
Using the star tip, pipe one final dot of icing on the tip of the strawberry.
Using the toothpick, dip the tip into the black food coloring and make two eyes on the Santa.
Place the strawberries in the fridge until ready to serve to preserve the stiffness of the icing.
Finally, enjoy these sweet little Santas with your favorite party foods for the Christmas season!
