How to make Cajun Style Red Beans and Rice

As a true Southern gal, and not only Southern but from Louisiana, there are a few things that I KNOW ALL ABOUT! First of all, I know how to develop flavor. Secondly, I know how to make a roux and of course I know how to make the BEST BISCUITS IN THE SOUTH! (You should totally check out that recipe) I also know how to make the Cajun Classics. Whether it’s a delicious gumbo, tomato gravy, cornmeal fried okra, or red beans and rice, I’ve got you covered! Today, I’m going to show you how to make Cajun Style Red Beans and Rice.

When it’s cold outside and I’m searching for something warm and hearty, I look no further than Cajun Style Red Beans and Rice! It’s one of my son’s favorite meals and it is packed with TONS OF FLAVOR! Beans are cooked in Cajun spices until rich and creamy and then combined with smoky Cajun sausage and poured over rice for an AMAZING meal! Don’t take my word for it, try it for yourself!

how to make cajun style red beans and rice recipe:

Equipment needed:

  • Instant Pot

Protein needed:

  • 1 lb. hot smoked sausage chopped into bite sized pieces

Pantry items:

  • 1 lb. dried red kidney beans
  • 1/4 cup olive oil

Fridge items:

  • 1 yellow onion finely diced
  • 1 green bell pepper finely diced
  • 2 stalks celery
  • 6 cups water
  • Hot sauce to taste (My favorite is Louisiana of course!)

Seasonings/Spices:

  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1/2 tablespoon chicken powder
  • 1/2 tablespoon seasoned Salt (Tony’s)
  • 1 teaspoon thyme
  • 1/2 teaspoon ground sage
  • 3 bay leaves

  • First, place the kidney beans in your instant pot and cover them completely with water. Let them soak overnight or all day. (I would let them soak for at least 8 hours. This helps the beans soften up for cooking.)
  • Second, take the soaked kidney beans and pour them into a strainer to get rid of the water that you soaked them in.

  • Third, take your instant pot and turn it on the sauté setting and pour 1/4 cup of olive oil in the pot.
  • Add the finely diced onion, bell pepper, and celery and cook until the vegetables become translucent.
  • Next, add the garlic powder, onion powder, seasoned salt, thyme, and sage and stir really well.
  • Then, add the soaked kidney beans to the instant pot with the seasonings and vegetables and scrape up all of the brown bits off the bottom of the instant pot from the seasonings. There is a lot of flavor there!
  • Then add chicken powder, water, and bay leaves.
  • Put the lid on the instant pot and use the slow cooker setting for 10-12 hours.
  • After the beans have cooked for 10-12 hours, take your potato masher and mash the beans until you get the consistency that you like.

  • Once you have mashed your red beans, add the chopped smoked sausage and hot sauce to taste.

  • Place the lid back on your instant pot and cook for an additional 2-4 hours to let all the flavors develop together.
  • Last but certainly not least, serve your red beans and sausage over rice and with a side of cornbread.
