The BEST Southern Style Hash Recipe for Two
I know the name “HASH” doesn’t sound very appetizing, right? But that couldn’t be farther from the truth. It’s a true “meat and taters” dish, and it brings back so many childhood memories for me. And no matter what anyone else has told you, this is the BEST Southern Style Hash Recipe for Two! My mamaw’s original recipe uses leftover pot roast or deer steak and cooks that down with fried potatoes and onions. Top it with thick gravy or ketchup, and you have the PERFECT SOUTHERN meal.

Let’s talk about the meat in this dish first. When I was growing up, my mamaw always used leftover pot roast meat to make a good hash. It was the perfect way to use the extra trimmings and create another meal that all of the family members really liked. Now, I like to use leftover deer steak cooked like a pot roast. (This meat comes from my delicious deer steak and gravy recipe.)
You get the same tender texture and flavor since both types of meat are cooked low and slow and in gravy.
Of course, you can cook whatever meat you like fresh, but I’ve found this to be the most flavorful. Plus, I don’t like wasting food, and sometimes, it can be challenging to recreate leftovers into a dish that everyone will eat again. But not with this recipe. It’s so Yummy!
Now, I will say I decided to do the recipe for two because sometimes my picky family can be weird about leftovers. (When I was growing up, we didn’t have a choice. And if I liked something, I obviously didn’t mind eating it two or three times, depending on its flavor and texture.) Double or even triple this hash recipe to make a meal for four or more people.
And since we are using leftovers and making them different, this style of hash takes on a different texture than the pot roast or deer steak and gravy recipe derived from. The potatoes are cooked in a cast iron skillet with a lot of surface area. The difference this makes is that the potatoes get a nice crisp to them. You don’t stir your potatoes often. Instead, you let them smother and develop a crust before stirring. Before long, you’ve got the crispiest golden potatoes and onion with that delicious, tender meat, which makes our hash the best!

Another way that we change the flavor profile of this “leftover” dish is to put ketchup on it. (I would never eat ketchup on my roast and mashed potatoes.) But the smothered potatoes in this dish are reminiscent of French fries, and the ketchup totally makes sense.
Now that we’ve established that this recipe is swooping in to save the day with that leftover pot roast or deer steak let’s talk about some other things that make it amazing!
- One-Pot Wonder—Okay, so it’s not made in a pot. It’s made in a cast iron skillet, but it only takes one! That means minimal mess and minimal cleanup. And for busy weeknights with sports and school, this fact alone makes it a winner.
- Simple/minimal ingredients—You only need potatoes, meat, and onions. (Of course, you need a little oil for frying and that cast iron skillet to develop a crust.) Add a little salt and pepper, and eat with ketchup!
- Cooking time under 30 minutes – Since all you have to do is cook/brown the potatoes and onions, this dish doesn’t take long to come together. (It depends on how much crisp and color you want to develop on the potatoes.)
- Versatility—This dish is delicious, but if you wanted to venture out and start adding things for your own take on it, it wouldn’t be hard to do. You could play around with different meats and some different types of potatoes and even add toppings like cheese or crispy bacon.
- Good for first-time cooks – If you are new to the kitchen but want to make an impression, this dish is for you. It’s not a stressful dish; it’s hard to mess up and tastes great.

- Use a Dutch oven or a large pot with a lid if you don’t have a large cast iron skillet. Just make sure you let the potatoes sit on the bottom of the pot long enough to develop a crust.

The BEST Southern Style Hash Recipe for Two Ingredients:
- 3 Medium Russett Potatoes (chopped)
- 6 oz. cooked deer steak or pot roast (small pieces)
- 1/2 medium yellow onion (sliced)
- 1 cup water
- 3 tablespoons avocado oil or olive oil
- Seasoned Salt to taste (I like to use Tony’s)
- black pepper to taste
The BEST Southern Style Hash Recipe for Two Instructions:
- The first thing you need to do is place the cast iron skillet over medium heat and add the oil to it.
- Second, add the chopped potatoes and onion slices to the cast iron skillet and arrange them in an even layer.
- Third, sprinkle the salt and pepper over the potatoes and onions.
- Next, allow the potatoes and onions to cook and develop a crust on the bottom before stirring them around.
- Once you have stirred the potatoes, arrange them in an even layer, cover the skillet with a lid, and let the part of the potatoes and onions that is sitting on the bottom of the pot/skillet develop a crust. (If the potatoes are drying out, add enough water to create steam before placing the lid back on the skillet.)
- Then, stir the potatoes and onions again and arrange in another even layer in the cast iron skillet.
- Keep doing this until most potatoes and onions have developed color and crisp and are cooked through.
- Next, add your leftover pot roast or deer steak meat to the potatoes, onions, and gravy.
- Once the meat is warmed through, remove it from the heat.
- Finally, serve immediately with your favorite sides. Don’t forget the ketchup!

- If you are looking for a great breakfast dish, look no further. This hash recipe would go great with a fried egg on top the next morning. You could even do scrambled eggs and add cheese for a creamy touch if you like. I would top that with some salsa and sour cream and serve a larger crowd for a fancy brunch. It would be both filling and delicious!
- Instead of serving it with ketchup, try serving it with BBQ sauce or even a yellow mustard-based sauce for a tang.
- If you want to add some heat, try topping your hash with hot sauce like Texas Pete or even red pepper flakes.
- Make a beef hash recipe using cooked ground beef instead of pot roast or steak for a more affordable option.
- Slow-cooked pork shoulder or pork butt would be a delicious replacement for pot roast.
