There’s no need for you to sacrifice the foods you love and crave just because you have a health condition. We just need to make a few adjustments to meet your dietary needs without sacrificing flavor, and this recipe does just that!

Now even though I’m not diabetic, I have been on a health journey ever since my non-elective surgery a few years ago. It threw me and my body for a loop and I’ve been trying to regain control ever since. (Slow and steady wins the race, right?) For this reason, some of my health restrictions or health goals are similar to diabetics including low-carb options. And that is why I’ve tried to find recipes that meet my dietary needs as well as my tastes. And there was no way I was going to give up pizza completely. (I will still have the occasional slice from a traditional pizza.) 

This low-carb pizza is just like a delicious thin-crust pizza from your favorite restaurant.

It’s a healthy alternative to relatively unhealthy food. And since the crust is made completely of cheese it is a great low-carb crust. Especially since cheese alone has close to 0 g net carbs. (Depending on the cheese you choose of course.) And for all of my people who have problems with gluten, guess what?! This pizza is gluten-free too! There is no white flour, wheat flour, or almond flour. Just cheese, eggs, and your choice of your favorite toppings!

A low-carb diet (keto diet) restricts net carbs to 50 grams or less per day and has been shown to reduce your appetite, lower triglycerides, increase good cholesterol, reduce blood sugar, and lower blood pressure. And those health benefits for me are priceless! After all, if I can get these under control, then I will have fewer health problems in the future, feel better, and keep my mobility and function. And lower-carb meals, snacks, and desserts aren’t something to be dreaded or afraid of. They can be super approachable and relatively easy with just a little bit of planning.

And that’s the challenge, isn’t it? Finding things that meet your dietary needs while trying to also feed your family that may or may not have the same restrictions. (This is where the planning part comes in) For example: Another great option for a healthy pizza recipe is to use a cauliflower pizza crust. There are several at my local supermarket that I’ve fallen in love with, and they make pizza night at my house a little bit easier.

This just goes to show how a few ingredient swaps can keep you in the family fun and still on track. Get the kids involved and let them make their regular pizza while you assemble your favorite keto pizza recipe.

The reason that I chose this Low Carb Diabetic Friendly Breakfast Pizza Recipe for my meal prep series this week is because it’s perfect as a make-ahead breakfast! It makes 9 servings (slices of pizza), tastes just as great when warmed up the next day, and is easy to stack and store in your meal prep containers. It also takes no time to put together, literally 3-5 minutes and then it’s ready to pop into the oven. Talk about a quick meal!

I love this Low Carb Diabetic Friendly Breakfast Pizza Recipe because it’s so easy to customize to your liking. The possibilities are endless when it comes to flavors and toppings. Since this is a breakfast pizza, I decided to use sausage, bacon, eggs, peppers, and onions but you could just as easily use pepperoni, ham, mushrooms, olives, etc… for a lunch or dinner option.

Tips for Low Carb Diabetic Friendly Breakfast Pizza Recipe:

  • Parchment paper will keep the cheese from sticking. Don’t skip this step.
  • If you want the cheese to get crispier, leave the pizza in the oven longer.
  • If you want the yolk to be runny, you will need to pull the pizza out of the oven earlier.

Low Carb Diabetic Friendly Breakfast Pizza Recipe Ingredients:

  • 1 lb. shredded sharp cheddar cheese
  • 54 grams red bell pepper
  • 30 grams of red onion
  • 9 eggs
  • 2 patties of turkey sausage
  • 1/2 jalapeno sliced and seeded
  • salt/pepper to taste

Low Carb Diabetic Friendly Breakfast Pizza Recipe Instructions:

  • First, preheat oven to 375 degrees.
  • Second, line a cookie sheet with parchment paper.
  • Third, sprinkle your cheese all over the parchment paper in an even layer.

  • Then, create holes for your eggs. We are doing 9 eggs, so I chose to do 3 across and 3 down.

  • Next, crack your eggs into the holes that you’ve created in the cheese.

  • Sprinkle each of your cracked eggs with a touch of salt and pepper.

  • Then sprinkle the bell pepper, onion, sausage, and jalapeno on top of the entire cookie sheet (around the eggs… to make sure that we can always see that beautiful yolk.)

  • Place into the oven and bake for 15 minutes.
  • Finally, cut the breakfast pizza into 9 pieces and enjoy!

Variations for Low Carb Diabetic Friendly Breakfast Pizza Recipe: (for breakfast, brunch, lunch, and dinner)

  • Bismark Pizza – Use the same cheesy crust and add pizza sauce, and eggs, and top with chopped ham.
  • Buffalo Style Pizza – Use shredded mozzarella cheese as your crust and add pizza sauce, cooked chicken, blue cheese crumbles, and red onion.
  • Caprese Pizza – Use shredded mozzarella cheese as your crust, top with slices of fresh tomatoes. Finish with a drizzle of garlic-infused olive oil and basil leaves.
  • Carbonara Pizza – Use shredded mozzarella as your crust and add eggs, green and black olives, ham, bacon crumble and a sprinkling of parmesan cheese to finish.
  • Carrettiera Pizza – Use shredded mozzarella as your crust and add tomato sauce, garlic, and fresh basil.
  • Vegetable Pizza – Use any kind of cheese you like and top with all of your favorite veggies like mushrooms, green peppers, onions, olives, and jalapeno peppers.

  • Can be stored in the fridge in Ziploc bags or an airtight container for up to a week.
