I’m back, guys, with another restaurant recipe that will knock your socks off! This is my Copycat Chicken Salad Chick Fancy Nancy Recipe, and it’s cool, creamy, and perfect for serving as an appetizer. 

I used to not be a fan of grabbing something out that I could easily make at home, but as I get older, my taste for fast food is quickly dwindling, and my desire for fresher items is on the rise. So, now and then, I swing by the Chicken Salad Chick restaurant and grab a scoop of chicken salad while my kiddos grab the much less healthy chicken nuggets and fries.

Is chicken salad healthy?

Since I am trying to eat a low-calorie, high-protein diet, this chicken salad is great over a bed of lettuce with a drizzle of dressing. You can also make a lettuce wrap for a nutritious lunch. Making this easy copycat recipe even more macro-friendly is a breeze.

What’s the story behind Chicken Salad Chick?

Chicken Salad Chick is one of my favorite restaurants, and it has tasty chicken salad combinations. So, I wanted to recreate one of those on my blog for you. That’s where the “Fancy Nancy” flavor comes into play. This chicken salad is full of fresh apples, grapes, and pecans and tossed in a deliciously creamy dressing. I wanted to bring this one to you first because this is the restaurant version of the chicken salad I already make at home.

How is my take on this classic recipe different?

My homemade version of the “Fancy Nancy” chicken salad differs slightly from the restaurant version. For starters, I don’t add apples. It’s not that I don’t like apples in my chicken salad. It’s because my kiddos don’t. (Remember the picky people that I live with?) The second thing I do differently is swapping out the pecans for walnuts. Both nuts are equally delicious. I’m just on a walnut kick, and I’ve always had them in my chicken salad.

Is chicken salad a good appetizer for parties?

You might be wondering how you can serve this delicious recipe for a party (baby shower, game day, New Year’s Eve, office potluck), and you are in luck because I have some really good ideas for you. I make this recipe as a hearty lunch for me and my daughter, and she requests that it be served on a large buttered croissant and accompanied with potato chips. (A super delicious choice, in my opinion.) So, if you want to do that for your party, just cut the croissants in half after you’ve stuffed them with chicken salad.

Another great idea for turning this delicious recipe into the perfect appetizer would be to serve it on Hawaiian Rolls. They are just enough for one person and easy to eat with your hands. The soft, fluffy roll compliments the creamy chicken salad so well, and the satisfying crunch from the nuts is “Chef’s kiss!”

  • Make this chicken salad in advance for a stress-free assembly on the day of your gathering. The flavors only get better as they sit. 
  • If you aren’t a fan of canned chicken, feel free to use rotisserie chicken from your local grocery store.
  • If you want to take it a step further and cook your chicken for this classic chicken salad, just follow these simple steps:
    • Place a whole chicken in a large pot and boil for about 15 minutes per lb. Let the chicken cool, then shred the meat off the bones.
    • If you don’t want to boil a whole chicken, you can also boil chicken tenders, tenderloins, or frozen chicken breasts. I like to do that at a much lower temperature so they don’t get tough and shred easily.

Copycat Chicken Salad Chick Fancy Nancy Recipe Ingredients:

  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 12.5 oz. cans of chicken (drained)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon celery salt
  • 1/4 teaspoon lemon pepper seasoning
  • 20 seedless grapes (halved)
  • 1/4 teaspoon Cavender’s Seasoning
  • 1/2 cup chopped walnuts
  • 1/4 teaspoon black pepper

Copycat Chicken Salad Chick Fancy Nancy Recipe Instructions:

  • First, open the cans of chicken and drain them before adding them to a large bowl.
  • Second, season the chicken with garlic powder, onion powder, celery salt, lemon pepper, and Cavender’s and mix.
