Delicious and Easy Creamy Italian Sausage Soup

I’m not a person that orders soups at restaurants, but many years ago, I went out to eat at Olive Garden with one of my best friends and she ordered soup from their menu. Her soup looked creamy and delicious and so I asked if I could taste it. Of course, she obliged, and I fell in love at first bite! I knew that it would be easy to recreate this soup at home because the flavors were deep but simple. And the ingredients were common staples that every pantry would surely have. This is my rendition of that “FAMOUS SOUP” from Olive Garden. I hope you try making it at home yourself and enjoy this Delicious and Easy Creamy Italian Sausage Soup!

delicious and easy creamy italian sausage soup recipe:

Equipment needed:

  • Dutch oven or heavy-bottomed pot

Protein needed:

  • 1 lb. hot Italian sausage
  • 2 tablespoons bacon fat (I keep left over bacon fat in my fridge every time I cook bacon for breakfast or other recipes)

Pantry items:

  • 1/2 yellow onion chopped
  • 6 yellow Idaho potatoes
  • 4 cups chicken broth
  • 6 cups water

Fridge items:

  • 1 cup heavy whipping cream

Seasonings/Spices:

  • 1/2 tablespoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

  • First, brown the Italian sausage in a large, heavy bottomed pot.

  • Second, while the sausage is browning, dice your onion.
  • Third, cut your potatoes into bite size pieces as well. (You can peel your potatoes if you like. I didn’t peel mine because I used yellow potatoes.)
  • Next, when your sausage is browned and completely cooked, take it out of the pot and place it onto a paper towel lined container to absorb all of the excess grease.
  • Then, add 1 tablespoon of bacon fat into the pot and add your diced onion.
  • Let the onion cook in the bacon fat until it is translucent.

  • Once the onions are translucent, add 1/2 tablespoon of garlic powder.
  • Stir the garlic powder into the onion and bacon fat and stir it constantly to make sure that it doesn’t burn.
  • Then, pour your broth and water into the pot.
  • Make sure to scrape up all of the delicious brown bits off of the bottom of the pot from the sausage, onion, and garlic powder.
  • Add potatoes to the pot.

  • Put a lid on the soup and bring to a boil. Let it boil for 10 minutes.
  • Add the Italian sausage back into the boiling soup.
  • Next, add the chopped and rinsed kale into the pot.

  • Bring the soup back up to a boil.
  • Then, place a lid on the soup and cook on low for 20 minutes.
  • Remove the lid and add heavy cream, salt, and pepper.
  • Taste the soup for any additional seasonings needed.
  • Finally, ladle a large bowl of soup and enjoy with crackers or bread!
