You might think that a recipe for scrambled eggs is super silly, but let me let you in on a little secret… People mess up eggs ALL THE TIME! There are many ways to go wrong. Overcooked, dry eggs with “lace” from the pan… are disgusting!

Being able to make the best eggs is truly a skill. It’s one of those foundational cooking principles that separates those who know something about cooking from those who understand that great food takes time and attention to detail.

Now, the moment you’ve all been waiting for. What is the secret ingredient in my recipe that produces delicious, fluffy eggs? Well, it’s simple, heavy cream. Adding a splash of heavy cream to your scrambled eggs adds a richness that can’t be replicated any other way. It makes them silky!

What exactly is heavy cream, and why is it so special?

The final combination that makes such a huge difference in getting a fluffy texture with your scrambled eggs is the temperature you cook at, the amount of stirring, and the type of skillet you choose. Let me explain myself a little further.

Be Sure To Pin It For Later!

My first recommendation is a non-stick skillet. This is going to be the best tool for cooking your eggs. (I have found that cast iron isn’t the way to go. My eggs stuck terribly to the bottom of the skillet.) The delicate eggs are taken care of using nonstick, and the risk of burning and sticking goes out the window. (For the most part)

My next advice is to cook your eggs at a much lower temperature. So many people try to cook their scrambled eggs on medium heat or, God forbid, high heat! Eggs are too delicate to survive extreme temperatures and remain moist and fluffy.

Lastly, stop stirring your eggs the entire time they are cooking. (Unless you want extremely homogenous eggs with absolutely no texture.) If you allow the eggs to slowly “set” before stirring them periodically, you will have large curds of beautiful, moist, fluffy eggs.

Simple Tips for Perfect Fluffy Scrambled Eggs Recipe:

  • Use a nonstick skillet to ensure your tender scrambled eggs don’t stick to the bottom of the pan.
  • Feel free to swap whole milk for the heavy cream. It will work just fine.
  • Not all spatulas are created equal, and when cooking an ingredient as delicate as eggs, I opt for the best. A silicone spatula is non-stick, durable, heat-resistant, and super easy to clean. (Dishwasher safe!!)

  • 2 large eggs
  • 2 tablespoons heavy cream or whole milk
  • Sprinkle of salt and black pepper
  • 1 tablespoon butter

  • First, crack the eggs into a small bowl.
  • Second, add the heavy cream, salt, and pepper to the mixing bowl and beat the eggs until mixed and fluffy.

  • Third, add one tablespoon of butter to a small nonstick skillet over medium-low heat.
  • Next, pour the uncooked eggs into the skillet with the melted butter.

  • Then, leave the beaten eggs alone until you see them start to firm up lightly, and then stir gently with a spatula. (By not stirring the egg mixture the entire time they cook, you will end up with large, fluffy curds of cooked egg and keep the scrambled eggs light and tender.)

  • Repeat this wait-and-stir method until your eggs are cooked to your liking. (I prefer a soft scramble.)

  • Finally, remove the scrambled eggs from the skillet and serve immediately with bacon and toast!

Storage for Perfect Fluffy Scrambled Eggs Recipe:

  • Scrambled eggs can be stored in an airtight container in the fridge for 2 days. (I recommend adding a little shredded cheese when reheating eggs for flavor and to keep the eggs moist.)
