I, for one, am a total fan and here for all the amazing variations that can be made with this delicious breakfast dish! And speaking of variations, my Avocado and Fried Egg Toast Recipe is one for the books. Let’s make it together!

You have the creaminess from the avocado, the decadence of a perfectly fried egg, just the right spice with warm chili oil drizzle, and a final sprinkle of crispy bacon for an unmistakable and needed crunch.

This is the ultimate breakfast/brunch dish. Not only is it delicious, but it is also beautifully presented. Pops of green, yellow, and red provide a feast for the eyes and tongue. It’s also a light meal that packs flavor and a nutritional punch!
- It can be adjusted to meet your calorie needs. (For example, you can eat Low-carb/low-calorie breads, healthy fats, and plenty of protein.)
- Easy to track nutritional data with individual items not being mixed.

Another great thing about this avocado toast recipe is that you can swap out many ingredients to customize it. For example:
- If you don’t like spicy foods, leave off the chili oil or replace it with a different sauce you like. Hollandaise or a simple drizzle of olive oil would be yummy.
- There are lots of toppings that can provide a nice crunch for this creamy toast recipe. If you don’t want bacon, a variety of nuts will do.
- If you don’t want a fried egg on top, scrambled eggs, a poached egg, or even slices of hard-boiled eggs would be the perfect addition.

My final recommendation for this dish is that you opt for exceptional ingredients. Although it’s a simple recipe, the core ingredients stand out. What am I talking about?
Well, cheap factory-produced eggs lack flavor and a deep, rich color. Go for cage-free eggs, or even better, reach out to a local farmer’s market for fresh eggs. (Egg lovers will agree!) Go for the thick-cut bacon instead of the thin stuff. And get a substantial slice of bread with some texture and flavor to elevate it even more.
This dish is a great choice to serve to a crowd for brunch for many different reasons:
- Eggs can be kept warm with reasonable effort.
- Bread can be toasted to order.
- Bacon can be made in advance.
- Chili oil doesn’t have to be warmed to drizzle.
- Avocado is best when fresh.
- Standard serving sizes are sufficient for a meal.

Avocado and Fried Egg Toast Recipe Ingredients:
- 1 slice of sourdough (or any good bread that you like)
- 1 avocado mashed
- 2 large eggs
- Everything But the Bagel Seasoning (to taste)
- 2 tablespoons salted butter
- 2 slices of bacon fried crispy and crumbled
- 1 tablespoon of Chili oil for drizzling
Avocado and Fried Egg Toast Recipe Instructions:
- (Before starting on the avocado toast, cook your bacon until brown and crispy. My preferred method is in the oven or the air fryer. Both techniques reduce grease splatter and mess and produce perfectly crispy bacon with all the fat rendered. Place the cooked bacon on a paper towel-lined plate to remove excess grease and crumble when ready to use.)
- First, place the slice of sourdough bread into a skillet with a tablespoon of butter over medium-high heat.
- Second, remove the toasted bread from the skillet and place it onto a plate when it has absorbed all the butter and is slightly browned.

- Third, add another tablespoon of butter to the skillet, melt it, and crack two eggs.
- **OPTIONAL: Then, add one tablespoon of water to the eggs and place a lid on the skillet so that the eggs can finish cooking. (This will steam the tops of the egg whites and yolks, which is an easy way to avoid flipping the eggs and breaking the yolks.)

- Then, cut your avocado open, remove the seed, scoop it out with a spoon, place it in a small mixing bowl, and mash it with a fork until creamy.
- Next, mix “everything but the bagel seasoning” into the mashed avocado.

- Once your eggs are finished cooking, it’s time to assemble your avocado toast.
- Place the toast on a plate.

- Arrange the avocado mash on top of the toast.

- Then, put your fried eggs on top of the toast.

- Top the fried eggs with the crispy, crumbled fried bacon.

- Place one tablespoon of chili oil in the skillet to warm, then drizzle it over the completed avocado toast.
- Finally, serve immediately, and enjoy!

Storage for this Avocado and Fried Egg Toast Recipe:
- I would not store the completed avocado toast. I would store every individual element.
- There is no need to store the toast; make it fresh each time.
- I feel the same way about the fresh avocados and eggs; however, you can store mashed creamy avocado in an airtight container with a double layer of plastic wrap pressed against the surface to prevent browning and oxidation. (You can also place a little lime juice or lemon juice on the surface to further protect the mashed avocado.)
- Place the crispy, fried bacon in a Ziploc bag until ready to use.
