There is one distinct place that I remember having taco soup in my childhood, the church. If there was going to be a pot-luck meal and soups were on the menu, you could be certain that taco soup would make an appearance. And honestly, I wasn’t mad about it. I LOVE taco soup! (And I’m not much of a soup person.)

Have you ever been to a pot-luck meal? That’s just a nickname for a meal where people bring whatever they want and we all eat together as a community or church. It doesn’t have to be limited to church, it’s anywhere with large groups of people. We also used to have pot-luck dinners at the school I used to work at. Each one of the faculty members would bring a dish. It’s a great way to try new recipes and to connect with people over food!

My Keto Taco Soup recipe is perfect for soup season, winter. It’s hearty enough for a meal and pouring it on top of corn chips just kicks up its ability to fill you up! Now, if you want to keep this keto taco soup recipe truly keto, then you would want to skip the regular corn chips, or you can measure them and make sure that you stay within your daily allowance of carbs. But later in this post, I will give you some low-carb alternatives for that much-needed crunch!

Anyway, back to why it’s perfect for the winter.

It’s got heat. And I’m not just talking about heat from the stove, I’m talking about a little spice. Of course, this heat shows up with the addition of sliced jalapeno peppers on top. Eating something spicy always helps bring up the temperature and adds a little interest to what some people would consider a boring meal, soup. (I think that soup gets such a bad rap, but I think it’s because so many lack texture and flavor.)

Okay, finally, let me tell you why I LOVE this soup! It’s all about texture, flavor, and simple ingredients. (I’m a texture person if you didn’t know.) Now, I will eat just about anything that doesn’t eat me first, but I really love to have contrasting textures in my meals. Almost every single meal for me needs to have a crunchy element. Without a crunch, it just feels flat and boring, and I think that’s why so many people don’t enjoy soups. Everything has the same mushy texture, and it can kind of feel like you’re eating baby food.

And Nobody wants that!

So, it’s incredibly important to have different textures in these one-pot meals. A little crunch is nice, something with a little bit of chew, and finally, a broth that is creamy or super flavorful. That’s why I’m always adding toppings to my soups. It just brings the meal up to another level. This recipe has some great chew from the meat and vegetables and then you are able to add your favorite taco toppings for other textural elements.

For example, the corn chips add a TON OF CRUNCH! That’s why I’m such a huge fan of adding them to your bowl. (Don’t add them directly to the soup, they will lose their crunch.) Slices of avocado and a dollop of sour cream on top will add creaminess. A sprinkling of green onion and cilantro will add freshness. And a few jalapenos will give you a little more heat!

The other reason why I love this soup is because it is an easy taco soup recipe that uses things that are probably already in your pantry. (Easy recipes usually have a convenience aspect to them, at least in my opinion.) What does that mean? It means that you are basically opening cans and pouring everything into one pot. (After you brown your meat of course.) Then you are just letting it cook on the stove. You don’t have to be super involved. You don’t have to watch it and never walk away. You can just let it simmer to let all of the flavors combine and enjoy the fruits of your super easy labor! (HA)

  • Don’t add your crunchy element, like corn chips, to the pot of soup. Add it on top of individual servings so that it doesn’t get soggy.

  • 1 15 oz. can of black beans
  • 1 15.25 oz. can of whole-kernel corn
  • 1 10 oz. can Rotel tomatoes
  • 2 lbs. 90/10 ground beef or ground deer (or you could use ground turkey or ground chicken to save some calories and fat)
  • 2 1/2 cups water
  • 1 packet of ranch seasoning 
  • 1 packet of taco seasoning (This has all of the onion powder, chili powder, and garlic powder that you will need)
  • 1 14.5 oz. can chili ready stewed tomatoes
  • 1 15.5 oz. can of hominy
  • 2 4 oz. cans of green chiles
  • 2 Beef Bouillon cubes

  • red onion or yellow onion

  • tortilla chips or corn chips

The Best Easy to make Keto Taco Soup Recipe Instructions:

  • First, in a large pot, brown your ground beef until fully cooked, breaking up any large chunks of meat.

  • Second, if you are using meat that has a lot of grease, drain the grease off of the meat. You could also rinse the meat to get rid of the excess grease. I know that this sounds strange, but I prefer to do this if my meat has a high fat content. I’m using 90/10 beef and lean ground deer. So there was no need for me to drain or rinse my meat.
  • Third, add the packets of ranch and taco seasoning and incorporate them into the meat really well.
  • Next, add the remaining ingredients: all of the vegetables, tomatoes, Rotel, beef broth, and water, and stir really well.

  • Then, let the soup cook on medium-high heat until it comes to a boil and then turn it down to low heat and let it simmer for at least 30 minutes, stirring every so often.
  • Finally, serve with your favorite toppings and enjoy!
