Sometimes, when we decide to make a change to better our health, it can seem intimidating because we have to rethink our food choices. It’s especially difficult when you are having to cook dinner for your family and make adjustments for your own dietary/health needs. Another challenge is finding things that are tasty and satisfying to snack on. When I think of snack foods, I want some crunch, a little salt, and flavor. It’s tempting to reach for chips and cookies, but those items would completely throw our health goals off track. So here is a snack that will leave you feeling full and not GUILTY! This Low Calorie and Easy PB&J is sure to be your new “GO TO” for those afternoon cravings!

Pantry items:
- 1 Chocolate flavored rice cake
- 1 Tablespoon Peanut Butter
- 10 grams chopped walnuts
Fridge items:
- 1/4 cup blueberries

- First, take your chocolate rice cake and spread the tablespoon of peanut butter evenly on it.
- Second, arrange your blueberries on top of the peanut butter. (Since it’s sticky, it keeps the blueberries from rolling away! LOL)
- Third, sprinkle the chopped walnuts on top.
- Enjoy as breakfast or a healthy snack to go anytime!
