Simple and Refreshing Watermelon Mango Feta Salad

Hola y’all! I’m here to bring you a refreshing watermelon mango feta salad with a delicious lime dressing! It only takes minutes to put together and is perfect for a picnic or healthy lunch!

So, I’ve been out for the Summer and what that means is that I’ve been eating rogue. Yeah, like crazy! When I’m on vacation, I don’t want to count calories. I don’t want to worry about what I eat. This is my one chance to try new foods and to not feel guilty about it. But school is about to start back and that means I have to get back on it! Back into my exercise routine and back into watching what I eat. This salad is perfect as a side dish with a low-calorie protein to start my health journey off on the right foot!

I know that different things work for different people, but I can tell you that I lost all of my weight, after having all my children, by counting calories. And that’s exactly what I’m going to do now in order to get off the excess summer pounds that I put on.

simple and refreshing watermelon mango feta salad recipe: (with calorie counts)

Ingredients:

  • 2 and 1/2 cups cubed watermelon (115 calories)
  • 1/2 cup mango cubed (50 calories)
  • 1/2 cup cucumber chopped (8 calories)
  • 1/2 small avocado cubed (44 grams) (70 calories)
  • The juice of 2 limes (not much)
  • 1 Tablespoon of extra virgin olive oil (126 calories)
  • 1/4 Teaspoon garlic powder (2 calories)
  • A few slices of red onion (5 calories)
  • 1/3 cup feta cheese crumbled (131 calories)
  • 1/2 ounce chopped walnuts (93 calories)
  • Serrano pepper sliced (not much)
  • 2 torn leaves of Basil and Mint (not much)

Makes 4 cups of salad Total Calories = 622 Calories per cup = 155 calories

  • First, peel and cube your watermelon and place into a bowl.
  • Next, cube your mango and cucumber and place into the bowl with the watermelon.
  • Third, add your avocado, red onion, feta, and cucumber.

  • Then, in a separate bowl, mix your olive oil, lime juice, and garlic powder and whisk together.
  • Pour the dressing over the salad and toss to coat everything.
  • Top with serrano pepper, mint, basil, and walnuts.
  • Enjoy immediately!
