Homemade Sausage, Egg, and Cheese Breakfast Burritos

When it comes to easy breakfast dishes, this one just can’t be beat! My Homemade Sausage, Egg, and Cheese Breakfast Burritos are made with fluffy scrambled eggs, perfectly browned breakfast sausage, and melty cheese stuffed into a soft tortilla for the best breakfast on the go!

There are so many reasons to love this delicious breakfast burrito. Let’s discuss a few!

  • Easily customizable for individual needs, taste preferences, and/or special dietary needs:
    • If you are on a low-calorie diet, swap out the pork sausage for turkey sausage, opt for fat-free cheese, and use low-carb tortillas!
    • If you prefer bacon instead of sausage, that’s also an easy swap!
    • Be adventurous and swap out cheddar for more pungent cheeses like Swiss, Munster, or Pepper Jack.
    • Don’t feel hemmed in with sausage. Bacon fits perfectly into this recipe and adds a nice crunch!
    • Add veggies, mushrooms, or even hash browns to make this burrito even more substantial and swap out ingredients for seasonal differences!
    • If you like a crispy texture, toast the burrito in a frying pan and use butter for a golden brown crust.
  • Perfect on-the-go breakfast option:
    • Breakfast is a meal that can get forgotten in the hustle and bustle of weekday mornings. (It is the most hectic time of day in my home.) But this dish is the perfect solution to that very universal problem. You can make these ahead of time and leave them in the fridge. Then, pop them into the microwave to warm, and be on your way. 
    • Don’t worry about messes in your vehicle. Everything is neatly tucked away inside that delicious flour tortilla, so your kiddos can have a substantial meal on the way to school, even when you are running behind. You can even eat these in the car and while driving, with no mess!
  • Great for a meal plan:
    • These burritos store easily in the fridge, require little prep, and can even be frozen in large batches.

It might be tempting to swing through the drive-thru and grab a McDonald’s Breakfast Burrito or even a sausage biscuit on those busy, stressful mornings. Still, I hope you reconsider that unhealthy splurge after seeing how easy these delicious burritos are to make.

First, by making this egg, cheese, and sausage burrito at home, you are fully aware of what’s inside. There are no surprise ingredients, obscene amounts of salt or sugar, and no hidden hormones or preservatives.

Secondly, you will save money. One of McDonald’s Sausage Breakfast Burritos costs over $2.69, which is insane when you realize that you can make five of these homemade burritos for a fraction of the cost!

Thirdly, McDonald’s breakfast burrito recipe has diced onion and green chiles, which are great if you like them, but not so much if you don’t. (This again proves my point that making your burritos, instead of buying them, allows you to stuff them with whatever ingredients you desire.)

Tips for Homemade Sausage, Egg, and Cheese Breakfast Burritos:

  • Wrap the burritos in a paper towel before wrapping them in the aluminum foil so that they are ready to heat in the microwave.
  • If you are concerned about the tortilla drying out in the microwave, use a little water to make it a damp paper towel and re-wrap the burrito before heating. This will keep the tortilla moist. (Wring the paper towel out well. It needs to be damp, not wet.)
  • To make a fluffy scrambled egg, resist the urge to stir the eggs often while cooking. Waiting for the eggs to set slightly before moving them around in the pan can result in larger curds or ribbons. 
  • Make sure that your preparation areas are wiped down well and cleaned. I like to assemble these burritos on my large kitchen table or countertop, which gives me plenty of space. 
  • These breakfast burritos are smaller, so there is no waste with my kiddos. Feel free to use regular-sized tortillas. (Or eat more than one. HA!)

Homemade Sausage, Egg, and Cheese Breakfast Burritos Ingredients:

  • 6 large whole eggs
  • 1 lb. Jimmy Dean pork sausage
  • 1/2 cup cheddar cheese (shredded)
  • 8 fajita-sized flour tortillas (smaller than usual)
  • 1/8 cup of heavy cream
  • 1/8 teaspoon of salt
  • 1/4 teaspoon of pepper
  • Salsa, hot sauce, honey, or syrup for dipping

Homemade Sausage, Egg, and Cheese Breakfast Burritos Instructions:

  • First, brown the sausage in a large skillet over medium heat, breaking it into small pieces.

  • Second, crack the eggs into a medium-sized bowl while the sausage is browning.
  • Third, add the heavy cream, salt, and pepper to the cracked eggs and whisk until well incorporated.
  • Once the sausage is thoroughly cooked and brown, remove it from the skillet and place it on a paper towel-lined plate to drain the excess grease.

  • Next, add the beaten eggs to the skillet, turn the stove to medium-low heat, and gently stir while the eggs cook.
  • Once the eggs have been cooked to your desired level of “doneness,” add the shredded cheese and incorporate.

  • Remove the cheese eggs from the heat, add the cooked sausage back to the skillet, and mix.

  • Then, take the flour tortillas and warm briefly in the microwave. (This will make it easier to wrap the burritos. When the tortilla is warm, it is more pliable and less likely to tear.)
  • Next, lay out the strips of paper towels and foil for each burrito on a table or the countertop.
  • Then, place the warm tortillas on each paper towel/foil.

  • Divide the egg and sausage mixture evenly between the five tortillas and place in the center. This will be about 1/2 cup.

  • Next, tuck the ends of the tortilla into the filling and then roll the tortilla to seal the ingredients and make a burrito. 
  • Finally, wrap the stuffed breakfast burrito inside the paper towel/foil, and fold tightly.
  • When you are ready to serve/eat, remove the burrito from the foil but keep the paper towel, and place it in the microwave to warm through.
  • Top your breakfast burrito with salsa, Pico de Gallo, hot sauce, honey, or syrup, and enjoy!

Storage for Homemade Sausage, Egg, and Cheese Breakfast Burritos:

  • Burritos can be stored in a large Ziploc Bag, after being wrapped in foil, in the fridge for up to a week.
  • You can also make these burritos in bulk and freeze them until ready. Burritos wrapped in plastic wrap and foil (to avoid freezer burn) and then placed into an airtight container (freezer bag) will last up to 3 months.
