Easy No Bake Cookie Butter Pie Recipe
I’m bringing you a pie this month that includes an unheard-of ingredient in my part of the world: cookie butter and Biscoff cookies. And until about a year ago, I was completely oblivious to this delicious ingredient, too! It’s exactly what it sounds like. Butter made from cookies, and it’s AMAZING! This Easy No Bake Cookie Butter Pie Recipe is a byproduct of my newfound discovery. I combined this decadent cookie butter with some cream cheese, sugar, whipped topping, and vanilla to create a no-bake pie recipe that will knock your socks off! And the best part is that NO COOKING is involved!

In the South, we know a thing or two about no-bake desserts (refrigerator pies). Add a block of cream cheese to just about anything, throw it into a pie crust, set it in the fridge, and call it a day! (And I’m not mad about that.) Adding whipped cream to the cream cheese mixture lightens it up a little bit. It makes this easy dessert “fluffy” or “airy,” almost like a mousse.
I make pies for a local restaurant, and two of my best sellers are no-bake pies using cream cheese and Cool Whip as their foundations. Both of these recipes are here on my BLOG.
- A No-Bake Peanut Butter Pie with Oreos—This pie is for the peanut butter lover! An Oreo Chocolate Cookie Crust is filled with a cream cheese peanut butter mixture and crumbled Reese’s cups. The pie is topped with a decadent chocolate layer of pudding and whipped cream. Finally, it’s finished with crumbled Oreo cookies and Reese’s peanut butter cups.
- Whipped Lemon Icebox Pie—This pie starts with a homemade graham cracker pie crust. Then, in a large mixing bowl, cream cheese, freshly squeezed lemon juice, lemon zest, sweet and condensed milk, vanilla extract, and whipped cream are fully incorporated until there are no lumps. That delicious lemon filling is then poured into the homemade graham cracker crust and chilled for a few hours to set.

I think this pie is delicious and decadent enough all on its own, but my youngest kiddo decided that he would pour chocolate syrup over the top of his slice and claimed that it’s delicious! I guess that’s not THAT hard to believe because chocolate and cookies go well together. But it got me thinking about other sauces that would be a nice drizzle addition to the top of the pie. And I think a caramel drizzle over the top would be lovely. I also think that a dark chocolate drizzle would be nice because it might help cut through the sweetness.

Tips for an Easy No Bake Cookie Butter Pie Recipe:
- If you want to whip even more air into your pie filling, use an electric mixer. It will also eliminate lumps in your filling.
- Making your own whipped topping is easy if you don’t want to use store-bought.
- Mix heavy cream, vanilla extract, and powdered sugar with an electric mixer in a large bowl until stiff peaks form.

Easy No Bake Cookie Butter Pie Recipe Ingredients:
- 8 oz. cream cheese
- 1 cup Biscoff cookie butter
- 16 oz. cool whip (whipped topping)
- 3/4 stick of melted butter
- 8.8 oz. Biscoff cookies (keep two cookies to crumble for the top of the pie)
- 1 teaspoon vanilla extract
- 1/4 cup powdered sugar
Easy No Bake Cookie Butter Pie Recipe Instructions:
- First, place the cookies into a food processor until they become fine crumbs.
- Second, drizzle the melted butter into the cookie crumbs while the food processor is on. You want the crumbs to become like “wet sand.”
- Third, place the cookie crumbs into a pie plate, press to form a crust on the bottom and up the sides, and set aside.
- Next, combine the cream cheese, cookie butter, powdered sugar, vanilla extract, and 8 oz. of whipped topping in a large bowl.
- Then, pour the cookie batter into the prepared cookie crust.
- Top the cookie butter pie with the remaining 8 oz. of whipped topping and crumble the two cookies on top.
- Finally, place the pie in the fridge for several hours to set, preferably overnight, because the flavor the next day is the BEST.
Storage for this Easy No Bake Cookie Butter Pie Recipe:
- Store the pie in the fridge covered in plastic wrap for 3-4 days.
