This is the great side dish you thought you could only get at a restaurant, but I’m here to dispel that myth! This is my Best Cheesy Twice Baked Potatoes Recipe, and I’m bringing it to you just in time for the holiday season. Potato skins are scooped out, and the flesh is mixed with cream cheese, bacon, sour cream, and more to make a delicious filling. Then, those same skins are restuffed with that delicious creamy filling and topped with extra cheese, bacon, and a sprinkling of green onions for a show-stopping, easy side dish!

If you’ve been around here long, you will know that I have one of the pickiest families on the planet! No, seriously. I do. And it’s so odd because I will eat anything that doesn’t eat me first. (HA) But thankfully, when it comes to baked potatoes, everybody in the house is ALL IN! Baked potatoes are a family favorite. And I can’t tell you how happy that makes my “momma heart.” Because it is so frustrating to spend my time, money, and effort to make a delicious recipe from scratch and for my family to sit down at the table and turn their nose up at it.

Now that you know my family adores baked potatoes, it should come as no surprise that this recipe is a great addition to my weekly/monthly meal rotation. Even though baked potatoes are delicious on their own, jazzing them up by baking them twice and loading them up with cream cheese, bacon, and cheddar is a real treat for the family.
I like to bake potatoes as a side for a meal and make extra. (That way, I only have to do the cooking once.)Then, I keep the extra potatoes that I cooked in the fridge until later in the week. After a few meals have gone by, it’s time to pull out those potatoes and bake them twice! Anytime you can cut out extra prep work or additional time on the same task, do it!

I like to plan my meals for the week. This way, I can arrange different proteins, breads, and sides and coordinate them so that nothing is wasted. It also keeps me from repeating things too often or making very similar things back to back. You don’t want to bore your family with the food placed before them every evening. That is how I cut down on repeat prep work and cooking.
The bacon in this recipe is exactly the same way. If you know that you will be using fried, crumbled bacon in the recipe, you may want to make a couple of recipes with bacon that week and do all of that frying at once. (FYI- I like to do my bacon in the air fryer. Before I got an air fryer, I cooked bacon in the oven, which also works great.)

Finally, one last thing I would like to say about this recipe is that it’s great for holiday dinners and Sunday suppers for special company. I don’t know why I care so much, but when I have company coming over, I like the food that I present to be pretty. I also want it to taste GREAT! If I can get both of those things into one recipe, then that is a winner for me.
There are so many beautiful colors and textures in this recipe. It begs you to dig in from the brown, crispy potato skins on the bottom to the cheddar cheese melted on top. The fluffy potato with specks of green onions on top and the oozing of the cream cheese sends it over the top visually. Place them on a decorative platter that doesn’t distract or your favorite holiday baking dish, and you don’t just have a comforting side dish, you have a show stopper that can hold its own by your main dish at that fancy holiday meal.

Tips for Best Cheesy Twice Baked Potatoes Recipe:
- Fry your bacon in the oven or air fryer for less mess and to free up your time to do other things.
- Scoop the flesh out of your potatoes while they are warm from the oven even if you aren’t going to make this recipe right away. It is challenging to scoop the potatoes when they are cold.
- Rubbing the potatoes with oil, salt, and pepper and placing them straight on the oven rack will give you a tender potato with a crispy skin. I like this because I eat the skin on the potatoes.
- This might sound like a silly tip, but grating a block of cheese yourself is so much better than using shredded cheese from the bag. The flavor and melt are better, trust me.

- 5 medium russet potatoes
- Avocado oil
- Salt/pepper
- 4 oz cream cheese
- 1/2 cup sour cream
- 1/4 cup butter (melted)
- 1/2 cup milk
- 1/2 cup shredded cheddar cheese (Plus some for sprinkling on top)
- 3/4 cup fried, crumbled bacon
- 2 green onions chopped
- 1 teaspoon of Tony’s seasoning
Best Cheesy Twice Baked Potatoes Recipe Instructions:
- First, heat oven to 400 degrees.
- Second, use a fork to poke a few holes into the potatoes.
- Third, pour avocado oil into your hands and rub it all over each one of the potatoes.
- Next, sprinkle a generous amount of salt and pepper on the outside of each potato and rub in.
- Then, place the potatoes directly on the rack in the oven and bake for 1 hour. (Turning them once at the halfway mark.)

- Once the potatoes are fork-tender and the skin is golden brown and crisp, remove them from the oven and cut them in half.

- Next, use a spoon to scoop the potato flesh out of the skins and place it into a separate large bowl.
- Then, place the empty potato skins into a casserole dish, baking sheet, or a large cast iron skillet.

- Then, in a large mixing bowl, mix the cream cheese, butter, sour cream, milk, cheddar cheese, 1/2 cup of bacon, and Tony’s seasoning with the scooped potato filling.

- Fill the potato skins with the cream cheese mixture.

- Afterward, Top each potato with an extra sprinkling of shredded cheese, a little bit of bacon, and green onions.

- Bake potatoes for 20 minutes at 350 degrees or until the filling is hot and the cheese is melted.

- Finally, serve hot and alongside your favorite main dishes!

Different Ways to Make the Best Cheesy Twice Baked Potatoes Recipe: (Variations)
- If you want even more crunch, add panko bread crumbs to the top of each potato. (Mix the bread crumbs with a little melted butter to prevent them from being too dry.)
- You can also add crushed Lay’s potato chips for a nice crunchy topping on top of each potato.
- Add diced jalapenos or red pepper flakes to the cream cheese mixture for a little spice.
- Add some minced garlic or garlic powder to the cream cheese mixture for even more flavor. You can’t go wrong with garlic!

- Wrap individual potatoes in aluminum foil and store in the fridge for up to 5 days. And since they are in foil, they will be easy to reheat in the air fryer or oven.
