Speaking of a house full of people who love sweets, I’m specifically talking about my boys and their sweet tooth! My husband craves ice cream, and my sons could eat chocolate, candy, and desserts as their main meal. My daughter and I are different. We are the savory lovers. We would much rather go back for seconds at dinner and skip dessert. But even Ava and I can’t resist Monster Bites! Behind chocolate chip, these are the favorite cookies in the house.

I started making them a couple of years ago whenever we would go on vacation or road trips. Anytime that I knew we would be in the car driving a long distance or on a trip where a delicious treat on the go would be needed, Monster bites were first on my to-do list to get ready because they are the perfect dessert for traveling.

These yummy cookies are great in the ice chest at the beach in particular. Being in the sun all day can zap you, but the protein from the peanut butter and oats mingled with the sugar from the chocolate chips and honey give you the energy to just keep going on a hot summer day. They are also great for little hands and there is no need for utensils or plates.

Let’s look at the history of Quaker Oats!

I’ve also sent them to school as a yummy treat for class parties for my kids. And it’s obvious, by the title, that they would be PERFECT for Halloween. You could even play around with decorating ideas for the occasion. Maybe some eyeballs made out of icing or marshmallows arranged to make them look like zombies? Drizzling some chocolate over them could look like spider webs if it’s done correctly.

I love making these Quaker Oats No-Bake Cookies because it’s such an easy recipe and doesn’t take a lot of time. They don’t require complicated instructions and use simple ingredients. And the best part is that there is no cooking involved! These delicious cookies have a wonderful chewy texture from the peanut butter and honey without the sticky mess. (That’s a big deal when eating in the car!)

Plus, with so many flavors and textures complimenting one other, it would be hard for me to believe anyone couldn’t fall in love with this recipe, especially kids! And since the foundation of the recipe is oats, you can feel good that they are getting a good source of carbs and fiber. The peanut butter adds extra protein, and the honey is a natural sugar at least. The chocolate chips and M&M’s are just for fun and color! (And of course, a pop of chocolate!)

Tips for Quaker Oats No-Bake Cookies Recipe – Monster Bites:

  • It’s a great idea to spray the measuring cups with nonstick cooking spray before pouring honey and peanut butter into them. This will keep them from sticking to the measuring cups.

  • If your hands become too sticky while rolling the monster bites, keep a small cup of water nearby and moisten them. Another great way to keep them from sticking is to spray them with nonstick cooking spray. 
  • For best results, when you roll the monster bites into balls, you need to apply pressure or squeeze the mixture in your hand before you roll them. This will ensure that they don’t fall apart.

Quaker Oats No-Bake Cookies Recipe – Monster Bites Ingredients:

  • 1 1/2 cups of oats (rolled oats or quick oats)
  • 1/3 cup honey
  • 1/2 cup of creamy, smooth peanut butter
  • 1/4 cup miniature M&M’s
  • 1/4 cup sweetened coconut flakes
  • 1/2 teaspoon of vanilla or almond extract
  • 1/4 cup of white chocolate chips
  • 1/4 cup of milk chocolate chips
  • 1 scoop of vanilla protein powder.

Quaker Oats No-Bake Cookies Recipe – Monster Bites Instructions:

  • First, prepare a baking sheet for the Monster Bites by lining it with wax or parchment paper.
  • Second, pour the Quaker rolled oats into a large mixing bowl.f
  • Third, mix well with the honey, peanut butter, coconut flakes, protein powder, and vanilla/almond extract.

  • Next, carefully stir in the M&M’s, white, and milk chocolate chips with a rubber spatula.

  • Then, scoop the cookie mixture with a spoon or a small cookie scoop, depending on the size you want, and roll it in the palm of your hand until it becomes a ball and place it on the paper-lined cookie sheet.

  • Finally, place the Monster Bites into the fridge to chill for at least an hour before enjoying!

Variations for Quaker Oats No-Bake Cookies Recipe – Monster Bites:

  • You can swap out peanut butter for other kinds of nut butter, such as cashew butter, almond butter, and cookie butter.
  • Add dried fruit for a nice chewy texture and chopped-up pieces of your favorite candy bars instead of chocolate chips.

Storage for Quaker Oats No-Bake Cookies Recipe – Monster Bites:

  • Monster Bites can be placed in an airtight container or a Ziploc bag and stored in the fridge for up to a week.
  • Monster Bites can be frozen in a Ziploc bag for up to 3 months but need to be thawed in the fridge before eating. (Let them come to room temperature before eating and store in the fridge.)

Ingredients
